About the Recipe

This lemon vinaigrette is one of my favorite salad dressings. It works for a simple salad or with crispy Parmesan chicken on a green salad.

Ingredients


  • 1/4 cup orange juice, fresh squeezed (any type of orange will do)

  • 1/4 cup lemon juice, fresh squeezed

  • 1/2 tbsp Dijon Mustard

  • 2 tbsp Lakanto Monk Fruit

  • 1 pinch Kosher salt

  • 1/2 cup extra virgin olive oil (use a high quality oil)

Preparation

In a small bowl add the lemon, orange juice, dijon mustard, monk fruit, and a pinch of salt. Mix well.

While continuing to whisk the mixture, slowly pour the olive oil into the bowl.  Serve over your favorite greens or salad, or add to chicken and warm vegetables.


Important Tips:

This salad dressing keeps well in the refrigerator from 7-10 days.  Remember to take the dressing out of the fridge 30-40 minutes before using to make sure the oil returns to room temperature.
