About the Recipe

This recipe packs a serious punch in the way of healthy fats, omega 3s and protein from plenty of nuts and seeds. Besides the health benefits, its absolutely addictive and delicious.

Ingredients

  • 1 1/4 cup coconut flakes, unsweetened

  • 1/2 cup almonds, sliced

  • 1/2 cup walnuts, crushed

  • 1/2 cup pecan halves, roughly chopped

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds, hulled (pepitas)

  • 2 tbsp. sesame seeds

  • 1/2 tsp. Celtic Sea salt

  • 3/4 tsp. ground cinnamon

  • 1/3 cup Monk Fruit

  • 1 tsp. vanilla extract

  • 1/4 cup coconut oil, melted

Preparation




Preheat oven to 300F; line a large baking sheet with parchment paper. Use two baking sheets if you don't have a large enough baking sheet.


n a large mixing bowl, combine all of the ingredients and mix to evenly coat with the coconut oil. Spread out on the prepared baking sheet(s) and bake until golden brown, 25 to 30 minutes, stirring halfway through.


Warning: When in the oven, watch this granola very carefully because it will burn fast and it's not saveable if it burns. (I'm speaking from personal experience).


Remove and allow to cool. Break into pieces. The granola can be stored in a sealed container in the pantry or refrigerator for up to a week (sometimes longer).
