About the Recipe
This curry cauliflower rice recipe is ready in about 12 minutes. It's fluffy and savory making it the perfect low-carb, gluten-free rice substitute for any meal.
1 pack (12 oz.) frozen cauliflower rice (garlic herb or plan flavor)
1/4 cup broccoli, steamed and roughly chopped
1/2 tsp. Curry powder
1/4 tsp. onion powder
Salt & Pepper to taste
2 Tbsp. Avocado oil
2 sprays of Primal Kitchen avocado oil cooking spray
Spray a medium pan with cooking spray. Place cauliflower rice in the pan and allow all the liquid to cook off. Stir and do not allow the rice to stick.
Once all the liquid has cooked off, add the oil and all the seasonings (salt, pepper, onion powder and curry powder).
Add the diced broccoli and stir well before serving.
